A vibrant restaurant, it is a place dedicated to the joy of gathering around delicious cuisine that blends tradition with spices. The restaurant is delighted to introduce its new Head Chef, Nathan Kessous, who is redefining its culinary direction with his unique vision.

Born in Israel, Nathan grew up immersed in a rich blend of French, Moroccan, and Algerian cultures, which gave him a deep appreciation for fine food from an early age. After initially studying medicine, he returned to his first passion: cooking. A lifelong enthusiast of flavour and creativity, he trained at the prestigious Ferrandi School and went on to refine his skills at Sadelle’s, Le Colvert as sous-chef, and later at Le Réfectoire, a renowned Parisian catering company. At the age of 30, he has taken the the helm of Boubalé. Nathan brings a personal touch to the menu, combining his diverse influences and championing locally sourced, sustainable, and seasonal ingredients. His warm and sun-kissed cuisine is inspired by his travels and heritage, offering a culinary experience that celebrates flame-cooking, embers, vegetable juices, and small fish.

The name “Boubalé” is a Yiddish term of endearment meaning “my little doll,” evoking the love of a grandmother. This familial culinary heritage is honoured through comforting and generous dishes. With cumin, mint, paprika, and other sun-drenched spices, each dish becomes a mosaic of delicious flavours, perfect for sharing around a communal table.

Like the Bosphorus, Boubalé gracefully blends Europe and the Middle East in a flamboyant setting that celebrates the splendour of Byzantium, vibrant colours, and warmly traditional architecture. Hand-engraved crystal glassware catches the light, opulent velvet complements ceiling frescoes, and delicate bespoke porcelain dances alongside nostalgic silverware. Baroque and fantasy intermingle, creating an intimate decor that exudes moving elegance, where time seems to stand still.
